Aloo Gosht is a delightful dish that can spark family debates on whether to pair it with rice or roti. Prepared in an instant pot, this recipe incorporates tender beef with aromatic spices and creamy yogurt, topped with fresh cilantro for garnish.
Turn your IP to sauté mode and add the oil.
Once the oil is hot, add all the sabut garam masala.
After 10 seconds, add the fried onion and ginger garlic paste, frying for 20 seconds.
Add the beef and brown it for flavor, about 5 minutes.
Add the masalas and the chopped tomatoes, mixing for 2-3 minutes.
Add 1/2 a cup of water, place the lid, and pressure cook for 20 minutes.
Release pressure and press sauté to dry out some of the moisture.
Add the room temperature yogurt and check seasonings to adjust.
Add the sliced potatoes and 1.5 cups of hot water.
Let it cool for 10 minutes before pressure cooking for 5 minutes.
Alternatively, you can pre-cook the potatoes, add them to the salan, and add hot water for additional gravy to cook for 10 minutes.
Garnish with cilantro and garam masala before serving.
