Hara Masala Malai Boti is a flavorful grilled chicken dish, marinated in a blend of yogurt, cheddar cheese, green chilies, cilantro, and a mix of aromatic spices. This recipe creates tender, juicy kebabs that are perfect for a delightful meal.
1. Cut the chicken into bite-sized cubes and soak in a mixture of 1 cup vinegar, 1 cup water, and 1 tablespoon of salt for about 15 minutes. Wash and drain.
2. Disinfect any area and container where raw chicken was in, including where you drained the water.
3. Blend cheddar cheese, yogurt, green chilies, cilantro, and garlic paste in a food processor.
4. To the blended mixture, add cream, cornflour, egg, and the following spices: ajwain, salt, white pepper, black pepper, Chinese salt, chicken powder, and coriander powder.
5. Mix the blended marinade and adjust seasoning to taste, ensuring it is slightly salty and spicy.
6. Put the chicken into the marinade and let it marinate overnight or at least up to 6 hours.
7. Grill the marinated chicken for about 7 minutes per side depending on the thickness, or air fry at 380°F for 15-18 minutes.
8. Brush with butter when done.
9. Squeeze lemon juice over the cooked chicken.
10. Mix chaat masala, kasuri methi, garam masala, Kashmiri lal mirch, and salt, then sprinkle generously over the kebabs before serving.
