A creamy, spicy, and slightly sour noodle sauce perfect for tossing with your favorite pasta. The sauce includes peanut butter, soy sauce, and a kick from sambal oelek. It pairs well with proteins and can also be used as a marinade.
Boil noodles of choice in salted water and reserve 1 cup of pasta water for the sauce.
Do not oil the pasta after boiling to avoid sticking; drain and wash with cold water to stop the cooking process.
In a bowl, mix all sauce ingredients (peanut butter, soy sauce, oyster sauce, chopped cilantro, sesame oil, Sambal Olek or Sriracha, grated ginger, grated garlic, brown sugar or honey, fresh cracked pepper, lime juice, and Maggi seasoning).
Thin out the sauce using the reserved pasta water and adjust seasoning to taste.
In a preheated pot, add 1 tbsp of oil and the sauce, cooking for 30 seconds.
Add the pasta to the pot, stirring to coat. Add a little water if the sauce gets too thick.
Serve with chili oil, your favorite protein, chopped scallions, and cucumbers.
