A flavorful red sauce shrimp dish made with marinated shrimp and a sweet and sour sauce. Perfectly complemented with ginger and spring onions, this recipe is a delightful combination of flavors and textures, served best with egg fried rice.
Marinate the shrimp with smashed garlic, soy sauce, sesame oil, pepper, and salt for about an hour, stirring in between.
Mix ketchup, sugar, vinegar, and crushed red chilies in a pot over low heat to create the sweet and sour sauce.
Julienne cut ginger and chop spring onion.
Heat a wok on high heat, add sesame or canola oil, sliced ginger, and spring onion, and fry for about 30 seconds.
Add a fistful of shrimp to the wok and fry until totally red, then remove and pour into the bubbling red sauce.
Repeat for remaining batches of shrimp.
Fry the last tablespoon of ginger and spring onion until slightly golden and add to the red sauce.
If needed, thicken the sauce with cornflour dissolved in water.
Taste for additional flavor and sprinkle spring onion for garnish. Serve with egg fried rice.
